I’m on Instagram too ! 🤍 Everyone Loves It - Chinese Steamed Eggs 蒸水蛋 Everyone from 8 Years old to 80 years old loves Chinese Steamed Eggs. This video shows you how to make smooth, silky and tender steamed eggs. *How To Make It Silky & Smooth* - The tricky part is the timing - how long do you steam. It’s hard to tell you the exact timing as each kitchen is different. My kitchen takes around 9 minutes in medium heat if I use a 7.5 inches stainless plate. 13 minutes in medium heat if I use a 8 inches china plate. Use it as a reference and your kitchen may vary a few minutes more of less. Do some testings and you will be fine. - also the temperature. consider this dish is a delicate dish. You want to transfer the heat in and out slowly instead of sudden change of temperature. that is why we use room temperature eggs and warm water and also let the steamed eggs sit for 5 mins at the end. *INGREDIENTS* 3 eggs (in room temperature) Sauce: 1 teaspoon of soy sauce - I use this brand 🤍 1 teaspoon sesame oil - amazon 🤍 *HOW TO MAKE* - Pick good quality eggs - Beat the eggs well so that the egg white and egg yorks combine well together - Using the ratio of egg vs water 1: 2, add boiled warm (not hot, not cold) water slowly into the egg and keep stirring the mixture at the same time so that the eggs and water combine well . use warm boiled water (avoid cold water) and room temperature egg (instead of right out from the fridge). As a gentle increase in temperature from warm mixture will produce finer texture. - Pour the mixture into the container through a sieve slowly to remove any bubbles and residues so that the steamed eggs will be smooth - There would be still some bubbles on top, remove the bubbles using a spoon or a gas gun. Then the outlook of the steamed eggs would be smooth and nice - Steam the whole content in medium heat for 9 minutes (do some testing and adjust the steaming time according to your kitchen setting). - Then switch off the fire and let the content sit aside for 5 minutes. - This let the reminding heat to finish the cooking process and also cool down the mixture slowly. Do not open the lid during the whole process otherwise the temperature would drop significantly and affect the result negatively. - Check if you like the texture of the steamed eggs. If you would like firmer texture, steam another 1-2 minutes and check again. Additionally, 1/2-1g salt per egg, vanilla (or some other extract), cream of tarter (~1g for every four eggs), 1/10th the weight of the flour in corn starch (optional). Make one egg's worth of batter for every 22 inches (360 cm) of pan volume (sorry I said “area” in the vid and gave the wrong cm figure!), where volume is width x length x height. You'll need big pan and an even bigger pan you can nest it into. With the pans nested, pour enough water into the bigger pan to come at least halfway up the sides of the smaller pan. Take the smaller pan out, and put the bigger pan (with the water) into your oven. Start the oven heating to 325 F (160 C) — no convection fan, unless you prefer a dry, cracked top. (If using convection, probably lower the heat to 300 F, 150C.) Coat all interior sides of the smaller pan with parchment paper. Leave enough excess that you can grab to sling the cake out when it's done. Separate all the eggs into two large bowls. Into the bowl with the yolks, put the oil (or melted butter), milk, flour, salt, cornstarch (if using — it makes the interior crumb finer), and a big glug of vanilla or any extract you're using. Weigh out the sugar in a separate bowl — I like to use a little more than 1 part sugar, but all of these proportions can be altered to various effects. Put the cream of tarter into the egg whites and beat them until they're very fluffy. Beat in the sugar in a couple installments until you have medium peaks — or stiff peaks if you want an even puffier cake, though that will likely result in a cracked top. Beat the yolk mixture until smooth. Gradually combine the white mixture and the yolk mixture until homogenous. Pour the batter into the parchment-lined cake pan, and drop the pan into the water bath in the oven. (Don't worry if it splashes — steam is good for cakes.) Bake until a skewer to the center comes out clean — probably at least an hour, though it will depend on the size. When the cake is done, use the parchment as a sling to lift it out before slicing with the longest knife you have.

Whampoa stir-fried eggs! This is a classic egg dish and - what's for me at least - my very most favorite way to scramble an egg. One of the cool things about this egg frying method is that you can add in an assortment of other ingredients - when they're other stuff added in, it's generally referred to as '[whatever] huadan'. In the video we show you a simple sort with Char Siu barbecue pork and Chinese yellow chives, but feel free to get creative. A bit fuller of a recipe is over here on /r/cooking, if you prefer: 🤍 INGREDIENTS - 5 medium eggs - Seasoning for the eggs: 1/2 tsp salt, 1/2 tsp sugar, a slurry of 1 tsp cornstarch (生粉) mixed with 1 tbsp water, optional 1/2 tsp liaojiu a.k.a. Shaoxing wine (料酒/绍酒), 1 tsp toasted sesame oil (麻油), 1/8 tsp white pepper powder (白胡椒粉), 1/8 tsp MSG -or- chicken bouillon powder (味精/鸡粉). Quick note that more traditional than the 1 tsp toasted sesame oil would be to add melted lard in the mix. You can definitely do that too, but I personally find it slightly redundant in the amount of lard I'm frying in. Totally up to you - if you feel strongly on the subject, add in, let's say... 2 tsp of melted lard. - Lard, for frying. In the video I said 1.5 tbsp, but let's go 2 tbsp (I decided to measure again after cutting the footage, apologies it's one of those things I always eyeball). You can use butter for this too - preferably something clarified like ghee or clarified butter. I also tested this with bacon grease, which is delicious, but definitely gives everything an 'American breakfast' flavor. - Add-ins: Char Siu BBQ Pork (叉烧), ~60g; Jiuhuang yellow chives (韭黄), ~20g -or- the white portion of, I dunno, ~4 scallions. Optional, of course. If you're thinking about getting creative with you add-ins, I'd say that the quantity I like adding - if you don't mind me getting all grandmother with this recipe - is somewhere around a 'handful's worth'. If you want to get fusion-y with your ingredients, remove the Shaoxing wine and toasted sesame oil from the ingredient list (you can swap with relevant equivalents if you like, or just skip them). If you are adding something very salty as an add-in, be mindful of the salinity here - when I do this with smoked Chinese bacon, I'll cut the salt back to 1/4 tsp. PROCESS - Optional: separate the whites and yolks, whisk the whites until large bubbles start to form. - If using any add-ins, cook your add ins. For us, we toasted the Chinese yellow chives for 2 minutes in a dry wok (note: Chinese yellow chives are very different from Western chives, do not toast your western chives for two minutes), and stir-fried the Char Siu for ~1 min - Once you're almost ready to fry, add the whites back to the yolks. Whisk again. If you did not separate the eggs, whisk for ~1 minute or until you start to see big bubbles. - Add in the seasoning. Quick whisk. - If you have any add-ins, add the add-ins. No baking powder Ingredients 2pcs Egg 20ml (4 tsp) Milk 30g (3.3 tbsp) All-purpose flour 1.25ml (1/4 tsp) Vanilla extract (optional) 25g (2 tbsp) Sugar Important tips 1. I used the all-purpose flour in here, you can also use cake flour to make 2. There are 25 grams (2 tbsp) of Sugar in total. Split it into 3 times to add. 3. Japanese Cheesecake (6" inch / 15cm) INGREDIENTS : A) 100g cream cheese 76g milk 35g unsalted butter B) 35g All purpose flour C) 38g egg yolks D) 78g egg whites 40g sugar 日式芝士蛋糕 (6" 寸 / 15cm) 份量: 一個6吋蛋糕 A) 100g 忌廉芝士 76g 牛奶 35g 牛油 B) 35g 普通麵粉 C) 38g 蛋黃 D) 78g 蛋白 40g 細砂糖 INSTRUCTIONS : Step 1- Preheat oven 150°c. Double boil ingredients (A) Cream cheese, milk, butter in a mixing bowl. Whisk until no lump. Put ingredients (B) All purpose flour, mix will. Last ingredients (C). Step 2- Beat egg white, sugar separate into 3 portions. Egg white must refrigerate before start beating (more stable when mixing) ; beat into soft peak. Step 3- Separate egg whites into 2 portions, fold gently with cheese mixture using a spatula. Step 4- Using the baking oil, spray on 6” inch mould on all edges. Step 5- Pour the mixture into mould. Stir the surface till smoothly with a stick. Prepare a tray then pour hot water around 1 inch height and bake the cheesecake in 150°c for a total of 70 minutes. First, bake 20 minutes with door close. Secondly, bake 25 minutes and leave a gap at oven’s door (around 1.5 cm) to let the hot steam slowly release out. This is to prevent the cake rises too high and the cheesecake surface from cracking. Third, rotate the cake and bake for another 25 minutes leaving a small gap while it bakes until golden brown. Total baking time is 70 minutes. Important tips. 1. Cake pan must fully covert and spray with baking oil spray (the cake will rise perfectly) 2. Before start mixing,the egg white must refrigerate after separated with egg yolk. 3. Your egg whites need to be soft peak after adding sugar in. 4. Bake the cake at 150 c° with water bath. First 20 minutes, second 25 minutes(turn over the cake and leave a small gap at oven door) third 25 minutes. Before start the third 25 minutes, your cheesecake surface must starting turn golden brown. If not, you need to rise the temperature to 160° for the third 25 minutes. Instagram : 🤍

Korean steamed silken eggs 계란찜 is a side dish I prepare every Sunday morning for breakfast. Steaming the eggs low and slow results in a soft and creamy texture that goes so well with whatever else you are serving to your family/guests. Once your egg mixture is in your pot/wok, you can basically walk away and not worry about it at all. The steaming time is a bit long, about 45 minutes for 6 eggs, but as I mentioned in the video, you can divide the egg mixture into 2 or 3 bowls to lessen the cooking time. Also, you can add chopped onion, carrots and other vegetables into the egg mixture before steaming. I like the clean appearance and simplicity of flavours of just egg, anchovy broth/water and fermented shrimp. Just my preference :) I have the recipe "pinned" in the comments section below. Chinese steamed eggs is a traditional Chinese dish. There are various ways to cook it. Cooking with shrimp or pork are two common ways. Bare steamed egg is also popular. INSTRUCTION 1. Boil a pot of hot water and put aside.  2. Prepare egg mixture. The egg verse water ratio is 1:1.5. Three egg is about 150ml , which brings the total mixture to 400ml.  3. Use a strainer to get rid of excessive bubbles and residuals. Filter it to a bowl or container has a little depth.  4. Cover the egg mixture with aluminum foil and use a knife to make some holes to let steam out.  5. Place the egg mixture in a steam rack in/above the pot with hot water and steam at high heat for 10 minutes. Make the water doesn't touch the egg mixture. 6. Prepare topping. Heat a pan with oil and ginger. Add ground pork and cooking wine when the meat turns white followed by soy sauce, dark soy sauce, and oyster sauce.  7. Prepare a mixture of corn starch and water (corn starch : water = 1:2). Add to the pot and cook until the topping gets thick.  8.
